Fresh-baked bread has never been easier! Original bread maker recipe using simple ingredients.

Densely nutritious homemade white bread made with flax meal and various seeds. Makes for a flavorful fluffy texture ideal for sandwiches and toast. This bread is packed with superfood seeds that aid digestion, heart health, blood sugar, and inflammation. 

I started making homemade bread in 2017 after a trip to England. My husband’s mother made us homemade bread using her bread machine. Every morning we got to enjoy delicious toast and fresh hen eggs. It was an absolute dream. 

My husband ended up convincing me to start making bread at home because store bought was sub par. It appeared that this homemade bread with soluble fiber helped his digestion and reduced IBS symptoms greatly. While it was not a cure-all, it certainly made all the difference and was significantly higher quality and healthier. Our bread would last significantly longer too! This is an original recipe I’ve come up with and I make it very regularly. I even use it for my french onion soup recipe!

Ingredients

Yeast: Natural rising agents in the bread. Instant yeast, bread machine yeast, or active dry yeast should be fine. I use active dry yeast, which many people say you have to activate in water/milk before adding to a recipe’s ingredients. This is unnecessary in a bread machine recipe because the bread will have a lot of time to proof.

Sugar: Food source for the yeast to grow and rise. White sugar is ideal.

All Purpose Flour: Standard inexpensive flour.

Hemp Seeds: Superfood high in protein and supports digestion. They contain trace amounts of THC, a psychoactive compound in cannabis, however it would not result in a positive drug test or get you high. May reduce your risk for heart disease, improve skin conditions such as eczema, and reduce symptoms of PMS and menopause. 

Flaxseed Meal: Whole ground flaxseed, brown flaxseed meal,  or golden flaxseed meal works. We use this versus the seeds to distribute more evenly in the bake. It’s great for digestive health because of dietary fiber: both insoluble and soluble fiber. Can help control blood sugar, improve heart health, and lower risk of cancer. 

Sunflower Seeds: Rich in healthy fats . Anti-inflammatory and can lower risk of heart disease. Mild nutty flavor. 

Pumpkin Seeds: Also known as raw pepitas. Nice crunch rich in protein, unsaturated fatty acids, vitamins and minerals. Has anti-inflammatory effects and great for heart health. 

Salt: Starves off the yeast in baking process so it doesn’t over rise. It also adds lovely flavoring to bring out the seeds.

Unsalted Butter: Tenderizes and softens the bread by making the dough elastic and prevents large air bubbles. 

Water: Adds hydration to bread and ability to mix ingredients evenly.

Troubleshooting

Bread didn’t rise enough: Could be one of two things. For this recipe I do not level the flour in my measuring cups. The other issue could be is that the yeast was old.

Bread has a giant cave in the center: You forgot the salt.

Bread feels wet on the outside: If you keep the bread in the machine long after the cycle finished, it will begin to sweat and have condensation. To remedy this, remove it from the pan and let it air dry.

Bread is really dense: You left the bread in the machine for a few hours after the cycle finished. For example: left bread in machine overnight. The bread will continue to cook as it rests in the machine. 

Bread falls apart when I cut it: Your bread should be fully cooled prior to cutting with a serrated knife.  

Bread is chewy: It wasn’t left in machine 10 minutes after cycle finished or it still hasn’t fully cooled. 

Bread did not mix well: Check to see that the kneading blade was cleaned property and attached.

Ingredients

  • 1 tsp Yeast (I used active dry yeast)
  • 5 tsp Sugar
  • 2 ½ cups All Purpose Flour
  • 2 tbsp Hemp Seeds
  • 1 tbsp Flaxseed Meal
  • 1 tbsp Sunflower Seeds
  • 1 tbsp Pumpkin Seeds
  • 1 ¼ tsp Salt
  • 2 tbsp Unsalted Butter
  • 1 cup Water

Instructions

  • Place all ingredients in 1lb bread maker in order as listed.
  • For best results, put on 4 hour basic setting. You can also do a bake rapid setting (3 hours). 
  • When machine goes off, remove loaf from machine. Let cool 10 minutes prior to removing from pan. 
  • Continue to cool until room temperature on wire rack. Slice with serrated knife.

Notes

Premature cutting of bread will be a little chewy bread because it’s still cooking while it cools. Allow it to cool before enjoying.
