Tasty salmon cakes with garlic aioli are keto, low carb, and gluten-free! Tender and flavorful, these patties are pan seared on stovetop until golden brown on both sides. Served with simple arugula and a tangy garlic aioli sauce!

Made from simple pantry items such as almond flour, dried herbs, and fresh (or canned) salmon. These salmon croquettes will surely be on a weeknight dinner rotation and keep you on track for a low carb diet.

This recipe yields 4 large patties (1 per serving), 8 patties (2 per serving), or 12 patties (3 per serving). Great for a main meal or appetizer at a party.

Fresh vs Canned

Fresh salmon is superior to canned. It’s less fishy and the taste will be overall better. It will keep moisture and be more savory. Be sure to dice it well. The batter may be more runny than if using canned. Don’t waste time pre-cooking the salmon.

If you’re in a pinch, use two 6 oz canned wild caught salmon. Make sure whatever type you get has no skin or bones. If you get it with skin and bones, it will be really fishy! Canned salmon is pre-cooked. This can be the more affordable option so definitely check for weekly sales at your local grocer!

Mayo Macros

Doesn’t quite matter which mayo you use since it is keto and has no carbs. However, you may want to watch the type of fats you decide to consume throughout the day. Not all fats are equal and some are linked with heart disease. In the case for mayo, it’s a total wash and based on your personal preference.

For more information on different types of fats, check out the American Heart Association’s website.

Avocado Oil-Based Mayo
Hellman’s Mayo

Ingredients

Salmon: Good source of omega-3 fatty acids, which are good for your heart. Not high in saturated fats.

Mayonnaise: For taste, I like Hellman’s. You can swap with an avocado oil-based mayo if you like.

Almond Flour: Gluten-free and a nice neutral nutty taste.

Eggs: Binds your ingredients together and gives a nice protein kick.

Avocado Oil: Adds keto fuel! Nearly identical macros as olive oil and can be interchangeable. Olive oil is slightly cheaper. Keep avocado oil away from your pets!!! Avocado is toxic to birds and cats.

Dried Herbs: Affordable pantry staple adds flavor. You’re welcome to use fresh herbs instead if you’re feeling fancy or flush. Prices in NYC are a bit crazy on herbs ranging from $3-$6 for a bunch or small <2 oz container.

Bell Pepper & Green Onions: Flavor and texture enhancers!

Collagen Peptides: An additional protein and amino acid kick. Perfect for strong hair & nails. Great if you’re working out and you need to supplement your diet. There are several on the market made from beef bones and fish bones… definitely not vegan.
