Keto Key-Lime Fat Bomb
Equipment
- Medium Bowl
- Zester
- Lime Juicer
- Small Cookie Scoop (Optional: 1 tablespoon)
Ingredients
- 1/3 cup Coconut Oil Liquid or Congealed Ok
- 2 oz Cream Cheese (Full Fat) Chilled
- 1/2 Lime Juiced & Zested
- 1 drop Coconut Extract
- 1/8 tsp Truvia Sweetener*
- pinch Salt
- 6 tbsp Unsweetened Shredded Coconut Divided
Instructions
- In a medium sized bowl, mix chilled cream cheese with silicone spatula to get it pliable.
- Mix in coconut oil, lime juice & zest, coconut extract, and salt, and Truvia sweetener. The mixture will begin to thicken because the coconut oil will chill from the cold cream cheese.
- Add in 4 tablespoons unsweetened shredded coconut. Mix until well combined.
- Using a small XOXO cookie scoop or 1 tablespoon, measure and scoop 10 bombs. Place onto a prepared plate with parchment paper.
- Chill bombs for 10 minutes.
- Place remaining unsweetened shredded coconut into a small bowl. Shape the 10 fat bombs gently into a ball and roll into shredded coconut.
- Store fat bombs in an airtight container. Consume within 1 week.
